Easy Chicken Noodle Soup

Chicken noodle soup is the old standby for cold winter nights or when you aren’t feeling well. This quick and easy recipe will get you feeling better in no time.

Flu bug got you down? There’s nothing better than a steaming hot bowl of chicken noodle soup when you aren’t feeling so well. Aside from the warming sensation you get just from eating it, there’s something therapeutic about it. And I don’t know if the old wive’s tales are true, but it does seem to have healing powers as well.

But even if you feel fine, chicken noodle soup is great on a cold winter’s day.

The best chicken noodle soup is the kind where you buy the whole chicken and let it simmer in the pot all day long. But many of us have hectic schedules and don’t have time to do that. Or perhaps you need to make the soup yourself while not feeling good, and you just want to get it done fast — but without having to settle for instant ramen.

Here’s a great recipe I’ve been making for years. I usually make it when my wife is sick with a cold or flu, but I have to work all day. So, I come home and slap this together and it’s actually quite delicious.

Ingredients

  • 3
    tbsp
    olive oil
  • 2
    lg
    chicken breasts
    diced into 1″ cubes
  • 1
    med
    onion
    chopped
  • 1
    cup
    fresh celery
    sliced, optional
  • 2.5
    qts
    chicken broth
  • 1
    can
    cream of chicken soup
  • 1
    can
    cream of mushroom soup
  • 2
    lg
    fresh carrots
    chopped
  • 3
    lg
    red potatoes
    diced into 1″ cubes
  • 3
    tbsp
    dried parsley flakes
  • 2
    cups
    pasta of choice

Directions

  • Add olive oil to a large pot over medium heat. Add chicken and onion and sauté until fully cooked and chicken is lightly browned.

  • (optional) Add chopped celery and sauté for about 30 seconds.

  • Add remaining ingredients and bring to a boil. Turn down heat and simmer for 20-30 minutes.

  • Meanwhile, prepare homemade Sizzle Biscuits, and put them in the oven while you complete the last step below.

  • Add pasta to the soup and cook until pasta reaches desired tenderness, about 15 to 20 minutes.

  • Consume.
